Before I get to sharing all the details of last weekend’s party, I have one more recipe testing post for you. Last year, I made a healthy smash cake for Hellobee. “Healthy” can mean any number of things, depending on who you are talking to, so to clarify: this one is free from refined sugars and made with whole grain spelt flour. It’s the kind of cake you feel good after eating – no sugar crash and the leftovers are suitable for breakfast! I also love that the ingredient list is short and that it’s easy to make.
This year, I wanted to create a chocolate adaptation of the original recipe. I also wanted to experiment with a cream cheese-based frosting in place of the Greek yogurt variation we loved so much. The flavors – chocolate, banana, cream cheese – sounded like the perfect team until I thought of another inspired member: peanut butter!
